What makes the perfect PEAS?

Discuss.

This could take a while, so I shall start with this one, which was pretty good



The poached egg looks a bit overcooked you say? Yes I would agree but that's how my flatmate Helly likes her egg. She's weird.

The accompaniment is what I'm really interested in discussing; organic spinach, mushrooms and a white onion fried with a red chili, some garlic and a splash of lemon juice. Freshly grated Parmesan added just at the point of serving. The observant amongst you will have noticed the addition of Maldon sea salt.

I also made a pot of coffee, as it was a lazy Saturday morning and that's what I do on a lazy Saturday morning. It's actually what I do most mornings.

  1. I must add that PEAS has educated me and I now prefer a softer yolk.

    I must also add that I recently went to Waterhouse Restaurant in Shoreditch and has what you might call a 'PPE' (perfect poached egg)- On this occasion served on cheesy toast ummmmmm....
